Spinach, mushroom, jasmine rice.

I absolutely love rice with varieties.. Although this is not gaps approved. It can still be a treat for the non gaps members in your family. I love rice in general. Here’s a recipe, I think you’ll enjoy.

Ingredients

Sea salt

2 tablespoons olive oil

1 small Onion

3 small garlics

2 green onion stalk (optional)

2 cups spinach

1 cup portabella mushroom

1 1/2 cups jasmine rice

Instructions

1.Pour rice into pan and pour water until it barely covers the rice.

2. Place on high heat, add a tablespoon of olive oil and a teaspoon of sea salt and bring to boil.

3. As soon as water start to boil, cover rice immediately and reduce heat to low.

4. Allow to cook 15 to 20 mins or until tender and water is gone.( remember rice shouldn’t be too soft)

5. Cut up onion, garlic, green onions. Chop up mushrooms:

6. In a separate large skillet add a table spoon olive oil. Allow to heat up on medium heat.

7. Add onions, garlic and green onion to skillet.

8. Add spinach and allow to cook for 5 minutes to soften:

9. Throw in your mushrooms. Allow to cook for a couple minutes.

10. When plain rice is finish cooking, add it to skillet. Mix well, add salt for taste. Reduce heat to low and allow to cook for 10 minutes. Enjoy!!
