Pancakes anyone?

  
So my older daughter who is currently 5 absolutely loves pancakes. Because my 3 year old currently has an eczema reaction to almond flour, we have to use coconut. I absolutely prefer coconut flour to almond flour, for me personally it taste better. The only problem is coconut flour really absorbs the other ingredients such as eggs, coconut oil or butter so you end up using more eggs and oil or butter to get the creamy consistency you want. Here’s the recipe…

Ingredients

  1. 1/2 cup coconut flour
  2. 6-8 large eggs
  3. 1/4 cup coconut oil
  4. 1 large banana (optional)
  5. 1/2 teaspoon baking soda
  6. 1/4 cup honey

Instructions

  1. Heat honey and coconut oil on low heat in a saucepan until melted.
  2. Pour in coconut flour, eggs and melted honey and coconut oil in a bowl.
  3. Use a cake mixer to mix ingredients (can be done manually by whisking)
  4. Heat skittle in low heat.
  5. Add ghee, butter or coconut oil in the skittle.
  6. Pour pancake batter and turn when golden brown.( keep pancake small in size, this will make it easy to turn)
